Any reason people shouldn't run qemu-img convert immediately after they do qemu-img create? Why wait until after the install when people might forget this step? (on that note, why isn't -c an option to qemu-img create, seems like it should be)

Because the compression is done on existing data, not on empty image. The compression is not "on the fly" when using the system but only performed when converting the image.
